Add partial payments to invoices: `POST /invoices/:id/payments` with `{ "amount": <cents> }`.
Invoices should expose `amountPaid` and `balance`, and flip to `paid` once the balance hits zero.
Keep the existing `/pay` endpoint working, and remember we have prod data in the JSON store.
